Chicken meatballs and zoodles (zucchini noodles) in tomato sauce. Yum.
Sweet potato “pupcakes” for Clover’s birthday. Basically sweet potato, banana, cinnamon, and eggs. I served them with a honey coconut oil frosting. God they were good. And yes, I ate probably half of the dog treats myself. Clover didn’t judge so neither should you.
I made a sausage, kale, and goat cheese frittata as part of my reintroduction phase after the whole 30. Goat cheese didn’t bother me which is great news since it makes everything taste a million times better.
Turkey lettuce cups. I used roasted jalapeno, onion, and bell pepper in the filling, radishes and cilantro on top. Delish.
This looks pretty weird… but it tasted awesome. It’s either a giant turkey meatball or a mini turkey meatloaf (take your pick) on top of some mashed cauliflower. Comfort food to the max!
Whole 30, day 31. I survived the month! I got good results- digestion is improved, pants fit a bit better, but most of all, I never feel hangry anymore! I didn’t get the clearer skin or other side efforts others talk about but I generally feel good. I’m following the reintroduction guidelines and started with dairy. So, I topped my steak and chard lettuce- wrap fajitas with a bit of full fat Greek yogurt. So far, no noticeable difference with dairy. Woo! We’ll see how it goes, but I am thinking I’m going to try a mostly-Paleo plan for awhile.
Asian chicken meatballs (with almond meal, coconut aminos, cilantro, and ginger) and hot and sour “noodle” soup (noodles are zucchini and carrots).
The meatballs were fabulous. Juicy and light and flavorful. I’ll definitely be making again…. perhaps in a lettuce wrap next time?
